For as much as Mountune is charging for that suspension kit, you might want to consider MeisterR, they have a fully adjustable system for a few dollars more. The adjustable dampening is handy if you daily your FiST.

Is the differential worth it? Seems like a lot to spend on a Fiesta when wider wheels/ties will do more for grip and handling than that.

I get that, I’m on an mr230 package myself. They make a lot of good stuff but some of it is way over priced compared identical products by other shops.
